Spanish Point Sea Vegetables - Irish Moss / Carrageen
Irish Moss (also called Carragheen or lat: Chondrus Crispus) is an ideal food additive as it has emulsifying and gelling properties. It is a great health supplement, and people have used it down through the years for colds, especially chest colds. You can boil and then strain it, and then mix it with maybe a drop of whiskey or lemon juice and honey. On the pack itself there are suggestions how to use it in the kitchen. Great thickening agent, suitable for vegetarians!
It is harvested by hand from March to September on the blue flag shores of Spanish Point in County Clare. It is then dried naturally by the sun and the wind.
