We owe this recipe to Martin Shanahan, owner of the Fishy Fishy restaurant in Kinsale, County Cork. It was broadcast in the programme “Martin’s still mad about fish” earlier this summer, and will give you a nice light recipe that can be used as a starter, main course or for a buffet.
For one person. Recipe can easily be multiplied
Half teaspoon of Wasabi or more if you prefer.
Juice of a lemon
Burren Hot smoked Irish Salmon, plain
Combine the mayonnaise with the wasabi and spread some of the mix on the wrap.
Add the salmon, rocket & pickled cucumber to the wrap. Add a squeeze of lemon and a pinch of salt.
Roll the wrap & enjoy!
