My side of salmon was an early gift for me and my husband for our 20th wedding anniversary (any excuse for salmon!), and we had a fantastic dinner last night. Hot-smoked salmon served at cool room temperature with a dollop of sour cream-dill sauce, homemade Irish brown bread, and fresh fiddleheads. (I don’t know if you have fiddleheads in Ireland. They are a particular variety of fern that is picked just as it is emerging from the soil and is still curled up. The season for them is only a few weeks in the spring. We had them steamed with butter and a splash of orange-champagne vinegar. Heaven!) We both declared it to be the best meal we had ever eaten — such simple, but exquisite, ingredients!

P.S. I snagged a new member for our salmon club this morning. I knew I had her on the hook already, so I reeled her in with a taste of my salmon. I hated to part with it, but love recruiting new members!”

“I just want you to know what an extraordinary performance UPS delivered in getting our package to us. There was apparently a mechanical problem with the airplane in Cologne, Germany, followed by adverse weather conditions, and it was substantially delayed in leaving Germany. You can follow the history of the package by clicking on the tracking information that appears below and then clicking on “view package progress.”  When you see all the delays that took place, you will be amazed to learn that the package arrived as scheduled on Thursday, July 3, even though I had received notification that delivery was going to be delayed until Monday, July 7 (due to the Friday holiday and the weekend).  When I got that notification, I was in a panic.  I am certain the fish would have spoiled if delivery had been held up for that long.  I am happy to report that everything arrived in perfect condition. I really don’t know how UPS managed to pull this off, but there were some very happy (and relieved) people here in Maine when that package arrived!  (I have been ordering salmon from you at Christmas for years, and suspect the odds would be much better in the winter if something like this should occur.  In the summer, though, this could have been a disaster!)  Just wanted you to know that you have chosen a good carrier to deliver your products.  I remain impressed and amazed at how they were able to get this package to us as originally scheduled.
